Easy Peasy Pesto.

I made pesto a few days ago and it was honestly the easiest thing everrrrrrrr! It was so easy and it came out so delicious (ask Jea and Lorenzo) that I had to share! Here's what you need:

  • 2-3 handfuls of spinach (sorry, I wasn't quite exact with this)
  • 4 peeled garlic cloves
  • 4 tablespoons of olive oil
  • pine nuts or almonds (optional)
Put it in your blender, food processor, or magic bullet... and voila! Pesto!

Of course, you can add your pepper, oregano, and crushed basil to level it up, but those first three ingredients will do.

You can spread it on baguette bread, place it on top of fish (broil in the over for 12 minutes max), or use it as the sauce to your chicken and pasta. Oh, the possibilities! :) Just figured I had to put this out there in the universe. This is seriously too easy not to pass up. Try it and see for yourself!
